Garbanzo beans (chickpeas) and spinach



One bundle fresh spinach or leafy green of your choice. This whole bundle was only $1 at a market by me:)


5 cloves garlic, chopped


1.5 tablespoons cumin, 1 teaspoon hot sesame oil, a pinch of: rosemary, thyme, zatar.
Soy sauce or tamari to taste (not pictured).


~2.5 cups garbanzo beans.
























How to: 

First, caramelize the onion in a neutral oil on medium heat. When they start to brown, add the garlic, beans, hot sesame oil, and soy sauce. I use 4ish tablespoons, but add according to your palate. Cover the pan, leaving a small crack for steam to escape. When the beans start to pop and/or get mushy, add the herbs and spices. Add the spinach and a little more soy sauce. Stir well and enjoy. You can serve this over rice or pasta, or eat it plain. I like to melt a little gouda on top.
